I found a recipe online for sweet potato fries. The flavor was good, but they were pretty soggy. The recipe called for 4 tbsp of olive oil, but I only used 2. I sliced them pretty thin, and put them in a 450 degree oven. Should I boil them first, then bake?

This method works for me and it's low fat - no frying.

2-3 sweet potatoes - peeled and cut into medium size french fries
Spread out evenly on a non stick cookie sheet - don't crowd them on top of each other.
Spray them w/ canola or olive oil spray and cook at 400-425 for 15-25 mins until done. Flip them half way through cooking.
When done sprinkle w/ coarse sea or kosher salt. Sooooo good and healthy!!!

I microwave mine until they start to soften, it is so much quicker, then I slice them into slices, put them on a pan with 1 or maybe 2 tsps. olive oil and bake on 425 degrees. I also like mine kinda brown, so i broil until brown, but not burned. Yummmmm

I watched Guy Fieri on the Food Network the other day and he made fries with Russett potatoes... he soaked them in water for 30 min before doing anything with them; he said it takes the starches out and will help cook evenly and from being too soggy... In theory, I would think this would work for sweet potatoes too?

we are fans of the tried and true, better for you, homemade baked french fries... however, when we just need that crunch...

i discovered, through research, the secret to yummy crispy fried fries at home :)

*badass proper french fries*

4 medium idaho potatoes, peeled (or sweet potatoes)

1 quart vegetable oil (seriously, we use our med. cast iron skillet and just eyeball the amount of oil we need)

kosher salt

rinse cut (1/4 in.) fries in cold running water until clear (blanch)

dry thoroughly (to reduce oil splatter)

in small batches, in med/hot oil (approx. 350)

fry until soft, not brown, about 3 minutes

remove, drain

increase temp of oil to high (approx. 375)

return batches until golden brown and crispy, about 2 minutes

drain

salt while hot

*super tasty option

1/4 cup unsalted butter, chunked

2 Tbsp thyme, chopped

1 garlic clove, minced

combine butter with thyme and garlic in saucepan over medium

pour over fries

yum yum yummy

please enjoy
