This is more of a tip than a recipe but my kid loves them. First cook, peel and puree sweet potatoes. I do a couple then freeze what I don't use (easy to defrost for pancakes all the time). I use store bought whole wheat pancake mix and mix it per the instructions on the box then add 1/4 cup to a 1/2 cup sweet potatoes and some cinnamon to taste. Adjust the water and sweet potatoes to get the right thickness. Scope onto a preheated skillet and cook until the bubbles pop and flip.
My kid likes mini pancakes he can hold in his little hands.
