the great veggie debate

My daughter is a fan of fruit, but has "issues" with vegatables. It seems as if I've tried everything and still her list of veggies she is willing to eat stays very short. Cucumbers, corn(only on cob), lettuce (not dark green), sometimes carrots and celery, and tomato sauce. Any suggestions?

Buy a food garnisher (crinkle cutter), My kids love their veggies when they are pretty, especially when I let them help prepare them. We make a tray of whatever veggies we have on hand and serve with ranch dressing. Also, I wouldn't worry about it too much, she does eat some veggies and she's sure to add in more as she gets older. I do agree with Laura too, as I've hidden many a zuchinni and even ground flax seed in my spaghetti sauce and chili.

Have you tried hiding it? I make my meatloaf crammed full of shredded carrots, green peppers, onions, etc. You can't tell it's there, so it's a great way to get both my son AND my fiancee to eat their veggies :) Also, mix in broccoli, finely chopped, into chicken dishes. If they can't visually see that it's a vegetable, they're fine with it.
