My sister turned me onto the secret chef recipes. They are GREAT, not only for my kids but for the whole family. Basically if you never heard about it, you take regular recipes that kids like and secretly add in veggies. The kids love it and it's also getting them to eat things they normally wouldn't without the fight. My favorite recipe is the chicken fingers!!!
1 Lg can of Yams in light syrup (Drain and Rinse)
1 small can of carrots (Drain)
Take this mixture and and put all ingredients in a blender/food processor. A hand blender and a mixing bowl works the best though. Blend all ingredients until all lumps are gone.
Now you'll need:
(Perdue has them and they are the same price as chicken cutlets, but without the work they are ready to go)
Get out your frying pan, and put a small amount of olive oil in bottom of pan. Put on med-high heat. Now take your bread crumbs and place them in a bowl next to the bowl of your veggie mixture. Dip your chix tenders in the thick veggie mixture and coat generously, take the battered chix and dip it in the bread crumbs and coat the entire tender. Shake off excess bread crumbs and place in frying pan, repeat until frying pan is full. Brown nice and dark (not burnt) and turn with tongs instead of a fork as this keeps all moisture from leaking out through little puncture holes. Line a plate with paper towels (2) and place cooked chix tenders on top, when full place another paper towel on top and continue layering until finished, this takes off excess oil.
***Remember not to place chix in oil until oil is completely up to temp, or the first batch will be very oily!!!
