Towering Apple Crisp

I am a huge fan of this extremely simple recipe that looks quite formal for entertaining! I will provide measurements per 2 servings, but it is easy to double or half on your own. Also, the recipe below has no refined sugar in it; however, if this is not a concern for you, feel free to substitute sugar for the xylitol in a 1-1 ratio.

Apple filling:
2 apples (gala and fuji are my preferences) , peeled and sliced
1 tbsp. xylitol
1/4 tsp. cinnamon (more to taste)
1 tsp. butter
splash of vanilla

Mix xylitol and cinnamon together. Melt butter in a pan over medium heat. Add apple slices and saute until tender. Add the splash of vanilla. Sprinkle with xylitol/sugar and cinnamon mixture. Set aside.

Cheesecake filling:
2 tbsp cream cheese
1-2 tsp. raw honey, to taste

Mix in a bowl until smooth.

Crisps:
4 store-bought wonton wrappers
1 tbsp. xylitol/sugar
1/4 tsp. cinnamon (more to taste)
Pil for frying.

Again, mix xylitol/sugar and cinnamon together. Heat oil in a shallow pan until hot. Deep fry the wonton wrappers one at a time until golden, flipping frequently (usually about 15 seconds per side). Pat dry with paper towels. Sprinkle crisps with xylitol and cinnamon.

To assemble, spread each crisp with the cheesecake filling. Top each with apple filling. Stack two sets on top of the others. Sprinkle with remaining xylitol/sugar and cinnamon and serve.
