I am in need of some help... I have two very picky girls. My nine year old is learning to try new things, and is getting better about eating what I cook, but I usually end up making peanut butter and jelly sandwiches for my four year old... I am limited on what I know how to cook, to pretty much spaghetti, tuna casserole, tostadas, and mac & cheese... which my four year old will only eat pasta with nothing on it.... any ideas for me? Oh, and no ground meat... neither my four year old or I will eat it.. ( I guess I am a little picky too...)

Like your four year old, I have a 2 1/2 year old that would eat peanut butter and jelly for every meal if allowed. One variation that I use is to mix peanut butter and jelly in a small bowl and then give him carrots (weird combo, I know), for dipping.....He'll also use apple and pear slices for dipping too. Creative way to incorporate fruits and veggies!

healthy pesto :)

quick and easy (approx. 1/2 hour)

big handful of basil
3 garlic cloves
juice of 1 lemon
2 glugs olive oil
handful pine nuts
*(for major nutrient boost, i add, a handful of steamed broccoli and a can of artichoke hearts(iron), the vegetables are masked by the strong basil :)
salt and pepper to taste
blend in food processor

*i add sautéed mushrooms, garlic,pine nuts and italian sausage
personalize as you like :)

add to cooked pasta, sprinkle with parmesan

yum yum yummy

Oops forgot one since your girls like PB&J

PB&J Pizzas (this is really fun!)

Buy some littel pita pizzas they are like 4 inces around

Spread on some peanut butter

Spread on some jelly (either strawberry or grape)

use cheerios/raisins as the topping (looks like "sausage")

Grate up some apples that are skinned (this is the "cheese") and put on the top

Eat and enjoy!!!



It was a big hit. My Aunt who is in her 50's came over and Gracie made her one. She thought it was so cute she had to tell all her co-workers. This way the girls would be involved in how much they put on their pizza and it's something other than the regular PB&J!

It's hard to get them to eat differently. If you like crockpot meals here is an easy receipe:



In a crockpot put in 2 cups of chicken broth

Crumble up 1 cup of soda crackers (any brand) and mix into the chicken broth

Put the crock pot on high

While the broth and crackers and warming up cut up 2 chicken breasts into cubes and fry in a pan with a little bit of butter.

Place chicken into the crock pot

Heat on high for 3 hours

You can take this mixture and place on buns and serve with cheese if you would like.

My girls loved it...even my 1 year old :-) and she's picky with textures!!!



Chicken and Salsa Pizza (my husbands receipe):

Buy a premade pizza crust (usually comes in a 2 pack) can freeze the other one

spread favorite kind of salsa on it (medium sized jar)

Put on a layer of cooked cubed chicken breast

Place a layer of cheddar cheese on the top (whatever type of cheddar you like best)

Bake at 425 until cheese is golden brown usually about 10 minutes

Cut and serve....yummy!



Grilled cheese:

We usually make grilled cheese with a few slices of deli thin meats. My oldest likes Ham and I prefer chicken



Today I made chicken Ramen noodles 2 packages so I could freeze some and it only took 6 minutes to make the noodles and then while it was cooking I heated up some mixed veggies and then mixed them together. I didnt' have any chicken breast on hand to mix in, but it turned out great! They shoveled it in :-) That way they also had their vegetables.



If you're looking for a healthy breakfast which as been a hit at our house. You can make a parfait with some simple ingredients. Chose whatever type of yogurt you like (we buy the big containers of yogurt usually vanilla, strawberry, or peach) put some yogurt on the bottom of a bowl/cup then add a layer of fruit we usually use strawberries or blueberries and then more yogurt and a layer a cheerios and then yogurt and fruit and so on. If I'm in a hurry I just mix it all into one bowl. Instead of cheerios you could use granola. I buy it in the section by the fruit in the grocery store where you scoop it in yourself because the boxed granola is really expensive and that way 1 scoop lasts us a few weeks. We usually buy Vanilla or honey nut granola.



A fun treat is to take grahmcrackers and spread them with whatever type of frosting you like. I prefer chocolate and then make a sandwhich and put in the freezer while you eat supper and you have a cool yummy treat when you're done. This is something that your girls could work on while you make supper.

Eating pasta with nothing on it is not a big deal - getting your children to eat a balanced meal is a big deal. If your daughter will eat some bland pasta on the side of a piece of grilled chicken and some green beans or a veggie combo (raw or cooked), then you have it made! Finish your meal off with a little low fat ice cream or pudding for a serving of dairy. Also, that P&J sandwich can have a side of carrot sticks and a glass of milk to make it a healthier option. You, mom, also need to experiment with the recipes in your local newspaper or check out www.recipezaar.com for ideas that are ingredient specific - type in what you do like, and it will find a recipe for you!

i'm lucky that my children eat almost anything they especially love things like vegetable lasagne, pasta bakes homemade burgers (altough i'm not sure if that falls under your ground meat thing!! ) pot roasts are always a good call! Try letting the children prepare the meals with you and to try some of the veggies raw aswell as cooked you migh find it encourages them to eat it if they've helped cook it!! Also try simple things like a homemade pizza with a choice of toppings my kids love to make those!!!
