Just out of curiosity, does anyone have recipe/meal/food that they eat (and love) in their family that they've not heard of anyone else eating? Maybe something passed down through generations, something from an ethnic background or some creative person's invention.

This is mine, that my parents made (from my dad's East European background, I think) that my kids love too:

Semolina cooked in milk on the stove until it forms a smooth porridge. Pour it onto a dinner plate (it will be thick enough to hold it's shape), spread with butter which will melt and sprinkle on sugar and cinnamon. It is very rich and filling but very much a 'comfort' food. I've never heard of anyone else serving semolina this way.

Most of my unique recipes came from my mother-in-law, who cooks Amazing Arabic food. Many of them require ingriedients that i have to get at the international food market. but here's one that doesn't.

mukluba (upside down rice dish)

the idea is to cook the rice mixed with vegetables and spices in a tall pot, then let it sit a while so when you serve it, it holds the shape of the pot. Imagine a tower of rice layered with cooked vegetables on a serving platter. It is really hard to do correctly, and I've only managed it a couple of times. but it is just as tasty if it doesn't stand up correctly.

It can be made with many different kinds or combinations of vegetables, but my favorite are cauliflower and eggplant.

cut the Vegetables into bite sizes, or slices for eggplant, zucchinis, or potatoes,
and sautee in olive oil untill they are golden. It is important for most vegies to be pre-cooked like this to add good flavor and make sure the end product has the right texture.

2 cups basmati rice
cracked peppercorns
1 tablespoon ground allspice
a pinch of cloves
1 teaspoon salt
half a head of cauliflower, chopped and sauteed till brown
half an eggplant, sliced and sauteed
2 Cups of water.
toasted pine nuts or almonds for garnish
Parsley for garnish

After the vegetables are sauteed, start layering all of the ingredients (except garnish) in a pot big enough but not too wide. First, a little water and the spices, to mix them in well. then a little layer of rice, then vegetables, then repeat layers and finish with the rest of the water. bring to a boil, then cover and simmer on low for about 25 minutes. it is important to let it sit for a long time before serving, if you want it to stand up correctly. then turn it over onto a plate and let it rest inside the pot upside down for a few minutes for best results before removing the pot. if you are lucky you will have a delicious tower of rice and vegetables to look at. But you are lucky anyway, because you have a delicious plate of rice and vegetables to eat!

serve mukluba with a cucumber,tomato,onion,parsley salad, lemon-cumin roasted chicken, and garish with toasted almonds and/or pine nuts

wow.. I think your going to love my little recipe blog!!! it's all been kitchen tested at my home, all recipes on there are the ones that made the cut for relative cheapness, interest, and mostly on taste. My rating scale is wether or not my man (and friends) eat all of it within the day or if it's gone the next day :)

Tomato Cheese and Rice:

Cook 1 cup of rice in 2 cups water, until done and soft. Mix in 1 can condensed tomato soup, 1/2 to 3/4 cups cheese, and cayenne pepper and paprika to taste. Optional: add cut-up pieces of hot dog.

This, and breakfast (eggs, pancakes, etc..) are the two things my dad would make for dinner when Mom wasn't feeling well, or just having a bad day.

My daughter's favorite ever!

this came from a cookbook I had when I first got married, It's very filling and cheap to make



Hot Dog Casserole

one package hot dogs sliced

1 teaspoon worceshire sauce

1 med onion dinced

5 cups noodles

1 can peas

1 can cream potato soup

salt

peper

garlic powder

1 cup milk

2 cups shredded cheese

Crushed Ritz crackers or potato chips



mix together everything but the crackers pour into a well lubed baking dish top with crackers and bake for 45 minutes

This is my mom's recipe.
Chicken Kielbasa.
1 Kielbasa
1.5 lbs chicken breasts, boneless, skinless
1/2 med. brown/yellow onion
garlic, to taste
tarragon, to taste
oil, as needed (about 2-3 oz)
1 pt, chicken stock
flour, as needed
Precook chicken. Mince garlic, onion and tarragon. Slice kielbasa and cube chicken.Put oil in bottom of pan and add garlic; brown. Add kielbasa; brown. Add onion cook about 5 min. Add chicken stock, reserving 4-5 oz, and cook for 20 minutes. Add more garlic, to taste. Add tarragon to taste (about 1-2 TBSP). Add flour to the reserved chicken stock and stir. Add to the pan. Boil until thick. Add chicken. Serve over Rice.

Makes me hungry just thinking about it.
