Saw the post on the lasagna. I like to use pureed canelli beans in place of cheese or tofu. Also, if you like to indulge your sweet tooth I have some great recipes from Sweet Vegan...I've made the peach biscuits, fruit pizza, chocolate mousse and plan to make the chocolate chip zuchini bread for a friend who's husband passed away and the monkey bread for the next special occasion. So far her recipes have been delicious and easy to reproduce. Let me know if you want any of those. Does anyone have a simple recipe or know where to get good vegan sausage patties?

Wow, I think you're all amazingly strong women! My best friend is vegetarian, and that seems doable, but vegan? It seems that it takes a lot of knowledge, time and commitment to do what you guys do every day. I think maybe I'll try it someday for a short period just to see what it's like, but we own a BBQ :), so I can't imagine the whole family being in on it. LOL Oh and yeah, get rid of the doctor...I would find a new one. I left our pediatrician a long time ago, because he didn't agree with me not vaccinating our kids.

Tofu Pumpkin Pie
Most delish Pie I've ever had.
I can pureed pumpkin
3/4 cup sugar
1/2 tsp salt
1tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1 tsp ground allspice - optional
1/2 tsp ground nutmeg
2-3 tblspns corn starch - to help firm pie filling
1 pkg silken/soft tofu
1 - 9 inch unbaked vegan pie crust
Preheat oven to 425 degrees
Blend pumpkin and sugar. Add salt, spices, cornstarch and tofu, blend throughly - tofu should not be chunky, should be very smooth. Pour mixture into pie shell, bake for 15 min. Lower head to 350 and bake for another 60 minutes. Chill and serve. Do not use lowfat tofu... makes it taste funky.

I also make a lasagna instead of ricotta and eggs, I use mashed up firm tofu. I use soy or veggie cheese in place of regular cheese and it turns out SO SO SO yummy.
Veg Chocolate Cake recipe
3 cups flour
2 cups sugar
2 tsp baking soda
1 tsp salt
6 tblspn cocoa powder
12 tblspn corn oil (i'm sure other oil works well too)
2 tblspn white vinegar
2 tsp vanilla
2 cups cold water
Mix dry ingredients. Make 3 wells in dry ingredients. In one well oil, in another vinegar and the other vanilla. Pour cold water over all. Blend well with a fork. Pour into an UNgreased pan ( 9x9x12). Bake for 35-40min @350 degrees.
Also makes great cupcakes - bake about 20 min.

Vegan Banana Bread
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup veg margarine
2 cups flour (I've always used unbleached)
3 very ripe bananas
1/2 tsp baking soda
1/4 cup vanilla soy milk
1 tsp vanilla
1 tsp cinnamon
1/4 tsp all spice
PreHeat oven to 350degrees. Mix dry ingredients. In separate bowl, mix margarine (softened) and sugar. Add bananas (mashed not blended) and soy milk and vanilla. Bake for 1 hr. Comes out really dense, but moist and delish!!

Thanks. The soy, rice and almond milks are all fortified... and I give her an infant vitamin also. She eats like a champ, but is SO SO SO active that I just feel like I cannot keep up with her calories! That's why I've added in the coconut milk recently to add a little more fat/calories in. I'm tall and thin also, always have been so that's why I'm not overly concerned...
Thank you for all your help. Anything that either of you swear by as a vegan, or any favorites. I'm giong to enter in some recipes in a min, I would love to hear what you all do for dinners/meals. Thanks for all your help :)

Sounds like you're doing great! We just give him fortified soy milk and he's happy as Larry. I totally agree with Nereyda about the weight issue. My son is thin but his father is a twig. He poops (the child, that is) about 4 times a day and eats whatever's in front of him. Right now we're just trying to add as much fat as we can to his diet. Soy margarine on the sandwiches, olive oil in the soups, etc. If your pedicatrician is not supportive though I really think it's better not have to defend your position but to simply find someone else.

Just wondering what you are doing for milk... or what you did for milk after you stopped nursing? I am still nursing once/twice a day, I do a combo of soy (sweetened and unsweetened) rice, almond and now coconut milk...just looking for thoughts/suggestions,etc.

please do share the banana bread one ... i've been trying to find one for days ... kids eat half a banana and leave the rest, i keep them in a zip loc in the fridge and then make banana bread .. but we just moveda few weeks ago and can't find anything .. chocolate cake too ... i have a WONDERFUL recipe for vegan cupcakes ... actually it's the Vean Cupcakes take over the world, recipe book and they are sooooo good!

ok... good to know. I have so many friends with babies our age... but none are vegan, or even close... Everything else is normal... Just wondering about the weight gain and my pediatrician isn't to keen on the vegan thing... so I don't want him to give me an earful about it... because he can't offer any other suggestions.

I didn't mean to add myself to the recipe page, obviously I'm new to this, so I can find a few recipes in the next few days... I have a lasagna recipe, pumpkin pie, banana bread, chocolate cake... and they are SO DELISH!! Let me know if you are interested in any!!

I wish my girls were... but I am married to a farmer. lol One loves meat and dairy etc and the other refuses to eat it. The good thing though they both love their veggies and eat lots of leafy green salads. They are almost 7 and 8. (yes, the one that eats no meat is healthier!)

it is a soy based, no lactose in it, baby formula made by Enfamil ... we use it to fortify to make sure she is getting enough caloric intake and vitamins, etc ... if you are concerned about weight gain consult your Pediatrician, but i would think it is safe to say that if she is pooping on a regular schedule, whatever is regular for her, don't worry about it ... after they hit one year old they drastically slow down with the weight gain ... example ... mine poops everyday ... and as long as that is the case, i don't worry much, plus there are so many variables, teething might decrease appetite, growth spurts with increase ... there is no constants with babies ... and they eat what they need ...

I am only adding a small amount to the soy/rice/almond that she already drinks b/c of the saturated fats and probably won't do it that often. Here's the situation... She isn't gaining weight (I feel) appropriately. Only 1 lb in 2 months... but she's been walking for almost 5 months now...started walking a little after 9 months and is now 14 months. She eats a TON. I do soy yogurt... she LOVES avocados and soy cheeses and basically anything that we eat, but I'm wondering what else I can do to keep up with how active she is. What is the prosobee baby formula?

breakfast for dinner, sounds good! ... i weaned them both using soy milk... almond and rice are good option but you need to find a way to fortify, i used prosobee baby formula ... because you gotta remember to keep up with the protein requirements ... that is the number one concern with vegan babies, ways to provide the necessary amounts of protein ... i guess coconut milk could work if your baby likes it, but texture is different and can it go through the small hole int he bottle nipple??

I actually just made vegan pancakes with coconut milk and organic bananas with vegan sausages. So yum. I am wondering what you do for a milk situation with your children. I nursed for 14 months and am slowly starting to wean... I still nurse 1-2 times a day... have been doing soy, rice and almond milk... but want to introduce coconut milk... any thoughts?
