Take chicken breast and beat it thin. I dip it in egg and then Italian Bread Crumbs. Fry it up, it cooks quick and serve. You can make gravy to put over it (I can't make gravy) or eat it as it is. It's fast and delicious. Janet

3/4 C parmesean cheese

Frypan Chicken and Rice
1 tbsp oil 1/2 cup water
1 lb chicken 1/2 tsp basil leaves
1 can chicken broth 1/2 tsp garlic powder
1 cup sliced carrots 3/4 cup white rice
1 cup frozen cut green beans

Heat oil at med-high in non-stick frypan. Add chicken and brown. Remove chicken. Combine broth, water, carrots, beans, basil and garlic powder in frypan. Bring to boil, stirring often. Reduce heat. Stir in rice. Cover and simmer for 5 minutes. Add chicken. Cover and simmer for 15 minutes or until rice and chicken are cooked.

This has always been a favorite for my family. My husband doesn't like his foods mixed together, but this is one he loves. You can substitue the veggies for ones that your family likes. I often change the green beans for brocolli and brown or wild rice for white rice. If you do change the rice, you will want to use already cooked brown or wild rice. Good luck.

Cheese Chicken Casserole

2-3 chicken breast
1 bag of cheese cubes,(I use cheddar)
1/2 cup of milk
1 can of Campbells cream of mushroom soup
2 bags of boil in a bag white rice
Half a bag of frozen chopped broccoli

Set oven at 350

You boil the chicken till it falls apart. Then in a seperate frying pan(you'll need a big deep one), mix the mushroom soup, cheese and milk and let it all melt and simmer. After it's all melted down, add already cooked rice, chicken and frozen broccoli. Let it all cook on a low setting for about 5 minutes. Then put everything into a casserole dish with a lid and bake it for 30 min.

I have a child that will not eat tuna, so we have substituted chicken. Take a box of macaroni and cheese (velvetta shells or or any other mix that comes with the cheese pouch) to that add boiled chicken cut into small pieces (quantity is up to you), 1 can cream of chicken soup and 1 can of milk. Mix in casserole dish and cover with shredded mozerella chees and bake at 350 degrees until the cheese starts to brown.

Sweet and sour pineapple chicken
Studded with sweet pineapple, snow peas and green pepper, this easy and impressive entree beats takeout anyday. Its savory sweet and sour sauce tastes delicious served over rice or couscous.
Ingredients

* 1 tablespoon (15 mL) vegetable oil
* 1 pound (500 g) skinless, boneless chicken breast halves, cut into 1-inch (2-cm) cubes
* 1 cup (250 mL) snow peas, halved
* 1 green pepper, cut into large squares
* 1 onion, cut into large squares
* 1 14-ounce (398-mL) can pineapple chunks
* 1/4 cup (50 mL) brown sugar
* 3 tablespoons (45 mL) vinegar
* 2 tablespoons (30 mL) soy sauce
* 2 tablespoons (30 mL) cornstarch
* 1/2 teaspoon (2 mL) ground ginger
* 1 clove garlic, minced
* Hot cooked rice

Cooking Instructions

1. In a large skillet or wok, heat vegetable oil over high heat. Add chicken and stir-fry until cooked through and slightly browned, about 5 minutes. Remove to a bowl, leaving the oil behind. Add snow peas, green pepper and onion to the skillet and stir-fry for 1 or 2 minutes, just until the color brightens. Add to the bowl with the chicken.
2. Drain the juice from the pineapple chunks into a measuring cup. Add enough water to the juice to make 1-1/4 cups (300 mL) of liquid. (Reserve the pineapple chunks, of course.) Into the juice mixture, stir brown sugar, vinegar, soy sauce, cornstarch, ginger and garlic.
3. Pour this mixture into the skillet, lower the heat to medium and cook, stirring to scrape up any browned bits from the bottom of the pan, until the sauce simmers and begins to thicken, about 3 minutes. Return the chicken and vegetables to the pan along with the pineapple chunks and continue to cook, stirring constantly for 3 to 5 minutes or until the sauce is glossy and thick and everything is heated through.
4. Serve immediately with rice.

Servings: 4
How kids can help

Prepare the vegetables and chicken for the dish.
Drain pineapple and mix up sauce ingredients.
Add ingredients to the pan while an adult cooks.

Quoting Ruthie :

Easy Chicken Puffs

Two to three chicken breasts shredded
1 can of cream of chicken soup or cream of chicken mushroom
2 cups of shredded cheddar cheese
2 pkgs Pilsbury crescent rolls
Salt and pepper to taste

Mix chicken, soup and most of the cheese together, salt and pepper to taste. Open crescent rolls and split into 4 rectangles from each package. Place on cookie sheet. Press together the diagonal seams. Spoon chicken mixture onto center of each rectangle and fold corners up over mixture. Press together the sides to close the puff. Sprinkle some shredded cheese on the top. Bake according to crescent roll instructions and darkness you like. This should make 8 puffs.

You can add vegetables to it or even make it into pot pies if you use pie shells instead of the crescent rolls.

I do something similar to this, but the filling is 4 cups cooked, chopped chicken, 8 oz cream cheese, salt, pepper, and onion powder to taste, and a little bit of milk if needed to thin it to the right consistency.  I've found that I don't need the milk if I use low-fat cream cheese.  Then you fix as above and bake on an ungreased cookie sheet at 350 for 25-30 minutes.  They are amazing, and kids love them!

Boil a large pot and add boneless skinless chicken breast. You can add maybe like 3. Then save the water after your done and cut on the chicken a lot and add mayo, celery, salt, pepper and cashews and there you have a nice chicken cashew salad. Then use the chicken water bring it to a boil. In a bowl add 2 cups of flour, 2 eggs and salt and pepper and milk so it isnt runny. Then drop those dumplings in the water and when they float there done and if you have a chicken breast of 2 you could cup those up and let your kids eat them too.

Recipe Description :
Simply delicious moroccan recipe

• 1 T Ginger
• 2 cloves garlic, minced
• 7-8 threads of saffron (soaked for 10 minutes in hot water)
• 3 T olive oil
• 1 small onion
• skin of one preserved lemon cut in four pieces
• 1 dozen green olives

Cook the chicken and cut into little peices, add cooked rotini noodles (or whatever shape), creamy ceasar dressing, and veggies the kids like - I put grape tomatoes, cut up little peices of yellow and red peppers, little bit of sliced black olives, and feta cheese today; but it could be anything your kids will not complain about:)

Apricot Brie Chicken:

# of breast of chicken

Brie Cheese (eating this alone and not cooked taste bad)

Apricot marmalade or jelly perserves (in the peanut butter and jelly section)

So simple: Put the Brie Cheese in the freezer while you start your prep work.

Pound the chicken on both sides to flatten it out the best you can.

-Pre heat oven at 325

-Pan Fry it for a few minutes on each side just to cook it a bit, don't over cook it.

-place chicken on oven pan and get out the brie cheese

-cut the cheese into big chunks like a cube or the best you can.

-place cheese (2 or 3 ) pieces on each chicken.

-add a little of the apricot jam on each chicken (not all of it) just enough to coat it slightly. For a little bake taste.

-place in oven for about 10 minutes or until completely cook and the cheese is melted.

-Take out and add the rest of the apricot. (or however amount your kids will prefer).

Some sides dishes like broccoli, corn, mashed potatoes, asparagus, baked potatoe, beans, whichever your family enjoy will make a great addition to this dish!

My son's (he's 7) favorite chicken dish that I make is called Apricot Chicken.  He even requested it for his birthday dinner!  It's super simple and only takes a few ingredients.  Here goes:

1 lb chicken tenders (can cut into chunks if you wish)

1-2 cloves garlic, minced

1/2 cup apricot jam

1/4 cup honey

1/2 cup BBQ sauce

1/2 cup water

2 Tbsp dry onion soup mix

2 Tbsp olive oil

1.  Sautee the chicken and garlic in oil until chicken is brown on all sides.

2.  In the meantime, in a small bowl mix jam, honey, bbq sauce, water and onion soup mix together and set aside.

3.  Put chicken glass baking dish and pour the apricot sauce over the chicken.  Bake at 350 degrees for about 20-30 mins.  Sauce will be bubbly.

I serve with white rice and broccoli and refrigerated crescents.  Enjoy!

In a cassarole dish mix 2 cans cream of chicken soup with 1 can of milk. Add either 1/2 a bag or 1 bad of shreded mild cheddar cheese (depending on how u like cheese) and add the chicken. Mix well. Pour a bag of frozen or thawed seasoned tatar tots on top and top with the other half of your bag of cheese if u have it r a new bag if u used a whole one in the mixture. Bake in the oven at 350 degress or untill the cheese is all melted and bubbly and the tatar tots are cooke all the way through.( usually 45min to 1 hour for frozen and 30min for thawed.) This is a quick dinner I make when I don't feel like spending all my energy on dinner, but it tastes great. My son and my husband both love it. You can used canned chicken, but if you need to cook whats in your freezer, just boil the chicken in water until its falling off the bone. Let it cool, and pull it all off. Combine the cooked chicken, a box of chicken flavored stuffing, 1 can chicken broth, 1 can cream of chicken (sometimes I substitute the cream of chicken with campbells cheddar and broccoli soup) and stir until well mixed. Spread the mixture into a casserole dish and bake for 30 to 45 minutes at 375 degrees. Easy, and gives you time to play with the kiddos while the oven does the work.

My son is 6 years old and he loves when I make bbq chicken. Just sprinkle garlic powder, adobo, touch of sazon and pour over bbq sauce, put water upto half the chicken and cover with aluminum for about an 1 1/2. Just drip on the water with seasoning about every half an hour to really juice them up. It is de-licous.

A chicken recipe that my children love is Chicken Alfrado! It is really easy and pretty quick, maybe 20 mins.

I use penne noodles because it is easier for my kids to eat than almost any other noodle.

1-2 jars of Alfrado sauce

1 box of penne noodles

3-4 boneless, skinless chicken breast.

1. Cut chicken into bite sized pieces and fry in a little bit of olive oil on medium- medium high heat until done

2. Add alfrado sauce to chicken in skillet, lower heat to simmer or low.

3. Boil your noodles until done. Strain.

4. Add your noodles, and chicken sauce together in pot you used to cook your noodles.

5. Serve and enjoy!

I do an easy chicken dinner for my family when I don't feel like doing much. You brown enough chicken (boneless skinless breasts) for everyone in a frying pan with a little oil. Then put chicke in a baking dish with enough cream of chicken soup to cover (soup + 1/2 can milk). Bake for 1hr. I serve it with mashed potatoes (Orida Steam & Mash when I am lazy) and salad. It is easy and super good. My kids can't get enough.

Another great recipe: Something i just made up on the whim one day was a lovely dish for my family!! simple pan friend chicken breast with peppers and onions, fresh parsley, cilantro with a side of rosemary foccacia with boiler onions

Chicken breasts ( again, however many you need, if you dont have many just cut them either on the fly, or filet it...your preference)

1 each color bell pepper ( red, green, orange,yellow)

1/2c green onions

1/2c white onion

1/2c cut fresh parsley ( save half for garnish)

1/2 cut fresh cilantro

2-3 cloves of garlic chopped

extra virgin olive oil

First take the olive oil and cover the pan ( enough to sautee)

add the peppers, garlic,green onions, and white onions sautee until everything is well covered but not completely soft. REMOVE FROM PAN

Take the chicken season it with, olive oil, salt,pepper, mrs.dash ( traditional blend), a small dash of red cayenne pepper,parsley and cilantro cover with plain bread crumbs- add to the pan of peppers and continue to cook. Once chicken is complete, then add the peppers and onions mix back into the pan, let simmer; remove all the chicken first, then top the chicken on a platter with the pepper mix, top/ garnish with the leftover parsley and cilantro!!!

Chicken and gravy is always a winner at my home, my kids love chicken and rice and just mix your own gravy, works everytime.

I dont have an exact recipe for this but its a broccoli,cheese and chicken casserole...

chicken breasts cut into strips ( as many are you would need to feed your family!)

White rice ( again however much you think your family would eat) 4-6 cups to make it a nice portion for each person.

1 can of cream of chicken soup ( campbells)

1 bag of frozen broccoli ( easy steam bags without sauce work great)

- if fresh boil it in water to steam cook it then put it in the microwave to finish the cooking process after you drain it

1 bag of cheddar, colbyjack, monterey jack cheeses ( or whichever cheese you prefer)

Cook everything separately, you will especially want to cook the broccoli down so that the kids hardly notice its there if they dont like it!!!

then when the rice is done get a casserole dish and put the rice at the bottom covering it all, next add a layer of the chicken, broccoli, then top it off with cheese. Continue this until you reach the top, then add cheese enough for a nice crust add a layer of plain breadcrumbs, then bake in the oven at 350 until your cheese is melted...no need to cook it longer than 20-25 minutes since the ingredients are already cooked!

**** another alternative mixing method is, mixing the rice, chicken strips and broccoli together then putting it in the casserole dish layering it with cheese and a final layer of bread crumbs.****

ENJOY!!!
