Lisa, one of my favorite recipes using leftover ham is, Springtime Ham, Asparagus and Cheese Melt. I’ve layered a skinny ham salad, steamed asparagus and reduced-fat cheese on top of toasted garlic bread. The skinny for 1 delectable servings is 221 calories, 7.5 grams of fat, and 5 Weight Watchers POINTS. It’s delicious and perfect to serve for brunch, lunch or dinner. I use it in soups. 1-2 cups of cooked chopped ham, 1-2 cans chick peas or garbanzo beans one bunch swiss chard and about 4 cups chicken broth. cook for about 45 minutes. I also freeze portions of ham to use later in red beans and rice. Good use for the ham hock as well.

Chopped up left over ham.
Noodles or Macaroni for amount to serve
can of Mushroom soup
1 cup frozen peas.

Cook noodles/macaroni. Drain.
Put in Casserole dish, add mushroom soup, ham and peas. Mix all together.
Cover with grated cheese. or buttered bread cubes.

Bake in 350 oven for about 1/2 hour.

Kids can't get enough.
Onions, mushrooms, ground black pepper or whatever may be added to taste if you find this too bland. I grew up on this one and my brother ate it for breakfast if there were any leftovers.

I make fried potatoes with onions and ham and I also put leftover ham in the crock pot with pinto beans and cook all day.

There is several things. You can make sandwiches; a grill chesse and ham sadwitch, plain ham sandwitch. You can make soup; chop it up n put it with potatoes and of cource some water.

I put it in potato soup. Usually my soup recipe calls for chopped bacon, but (especially in winter!) I add ham chunks to make it heartier--and usually get more compliments with the ham anyway! Here's my potato soup recipe (it's not quick):

Baked Potato Soup

- 2/3 cups butter

- 7 cups milk

- 3/4 t. salt

- 12 strips bacon, cooked & crumbled (again, your leftover ham instead, or store-bought cubed ham, when I want to make it heartier)

- 1 & 1/4 cup cheddar cheese (a little more never hurts!)

- 1 cup sour cream

- 1/2 t. pepper

- 2/3 cup flour

- 4 cups cooked potatoes, cubed (again, more never hurts)

- 4 chopped green onions

Melt better, add flour, stirring until smooth. Gradually add milk, stirring constantly until thickened. Add chopped potatoes and onions. Nring to a boil, stirring constantly.

Add remaining ingredients. Reduce heat and simmer for 10 minutes.

* This also works well using leftover baked potatoes *

A quick and easy meal for leftover ham is chop it up and mix in mac n cheese.Kids love it!Can also make grilled ham and cheeses!

We used to make a ham and potato casserole (using a white sauce based cheese sauce). It was so yummy!!!

Here's a quick easy recipe my mom used to make:

Cook noodles or cubed, peeled potatoes (it's good either way)

Make a cheesy sauce:

2 T butter, melted

add 2 T flour, mix

Add 1 c milk, stir until thick

Add 1 c (or as much as you want) cheddar cheese

Salt and Pepper to taste

Add chunks of ham



Pour over the noodles/potatoes, top with more cheese if desired. Yummy and easy!

i make a dish my mother-in-law makes:

you will need:

one bag of egg noodles

left over ham

white ground peper

oragnao

1sm-med onion choped

1green peper choped (optional)

1 and 1/2 sticks of butter

here's what you need to do.

Prep water for noodles and cook as directed..

Then take left over ham and put it in a food processer pulse it till ground up as fine as you want. set aside...

saute pepers and onion in 1/2 stick of butter till tender, then add the other stick of butter and ham.

white peper and oregano to taste

it is very good my 6 year old loves it. and the ham mixture can be used to top salads.

I make scalloped potatoes, all you do is cut up potatoes like you would for chips, layer them with cheese and little cubes of butter and add little bits of ham and repeat. :) It's so yummy.
