depends on how you are preparing your chops.. if you plan on frying them... just use the drippings.. (add a little oil if you dont have enough drippings) put in flour to make a great paste.. then add milk.... season to taste ( I like to add fresh ground pepper) makes a great pork gravy!

Yesterday was a lazy supper day. Bought a roast chicken, made seasoned rice from the package and caesar salad (from a box)! I discovered that my 3-year-old actually likes caesar salad! I have never seen her eat salad before.
Tonight is leftover night. Maybe tomorrow will be ZIPLOC omelette!

I made this yesterday and loved it!
Slow Cooker Curry Chicken
Mix together:
3 Tbsp. Curry
1 Tbsp. Cumin
1 Tbsp. Turmeric
1 cup Five Alive (this is what I had on hand, you can use apple or orange juice)
1 tsp. honey (or more if you like it sweeter)
1 onion diced
Put chicken pieces in the slow cooker (I used 4 thighs, but could have used 6) and pour spice mixture over top. Cook on low for 8 hours. Add 1-2 cups of frozen green peas at the end, just enough to let them warm up. If you want more veggies, you can also cook carrots along with your chicken

Turkey Sausage in creamy sauce
1 lb Hot or Sweet Italian-style turkey sausage
1/2 bag of frozen peas
2 cups heavy cream (or whole milk)
1 cup of grated parmesan
1 lb of whole wheat penne
Salt and pepper to taste
Put water on for pasta. Brown sausage. Add heavy cream and bring to boil. Add peas and cover. After peas have cooked about 5 -7 minutes, uncover and bring to a boil until liquid has reduced some. Stir in cheese and add salt and pepper. Add drained pasta to sauce and mix.

everyone to be amazed.
Nice to serve with fresh fruit and coffee cake; everyone gets involved
in the process and a great conversation piece.

Chicken Tetrazzini
Boil chicken and de-bone and cut into small pieces (you can use a whole chicken, just chicken breasts, or even canned chicken breast if you prefer, although the recipe is better with fresh chicken rather than canned.)
1 large green bell pepper, diced
1 large onion, diced (or use two if you like a lot of onion; I do.
3 or 4 celery stalks, sliced
Saute pepper, onion, and celery until tender.
Spray bottom and sides of baking dish with baking spray (I use a large glass 10.5 x 14.75 x 2.25 size dish because I make a large recipe; or you can break up into smaller dishes if you want.)
Mix cooked, deboned chicken, peppers, onions, and celery together and place in bottom of pan.
Combine cream of mushroom soup and cream of chicken soup (use large cans if making a large recipe; otherwise 2 small cans of each) in a pan. Add milk (if using large cans, add about 1/2 can; if using small cans for smaller recipe, add 1 can) and heat the soup/milk mixture. Pour this over the chicken/peppers/onions/celery.
Boil spaghetti noodles per package instructions. (If you boiled your chicken for this recipe, strain and use your chicken broth to boil the spaghetti, adding water if needed. It adds a little to the flavor.
Strain cooked spaghetti noodles and layer them over the soup mixture. If you're making a large recipe, use one 16 oz box of noodles
Cover spaghetti with grated cheddar cheese (sharp or mild per your preference)
Bake at 350 about 30 minutes or until cheese is melted and dish is hot all through. (I place foil under my baking dish because it has a tendency to bubble over the edges of the pan.

Fake lasagna--I had left over penne pasta, some ricotta, and an open jar of sauce. When I usually make lasagna, it's a process, and I make 3 pans. This was perfect--Just a little sauce in the bottom of a small pan, the noodles, mix the ricotta with an egg, salt, pepper and a little moz, layer that, top with sauce and more moz.

Today for lunch:
I had leftovers of the Slow Cooker Shredded Chicken above in hard taco shells with shredded tex-mex cheese and plain yogourt... yummy!
Next time, I will make my shredded chicken with taco seasoning and salsa. mmmmm...

Tonight we are having Beef Taco Bake. Here's the recipe if you want to try it:
-1 lb. ground beef
-1 can (10 3/4 oz.) tomato soup
-1 cup salsa
-1/2 cup of milk
-6 flour tortillas, cut into 1" pieces (you could also use 8 corn tortillas instead)
-1 cup shredded Cheddar cheese
1. In skillet over med-high heat, cook beef until browned, stirring to separate meat. Pour off fat.
2. Add soup, salsa, milk tortillas and HALF the cheese. Spoon into 2-qt shallow baking dish. COVER.
3. Bake at 400 F for 30 minutes or until hot. Sprinkle with remaining cheese.

since i did not use all of my beef roast that was left over last night tonight i am using the rest of it to make sheppards pie! i'll cut it up in very small pieces to mimick ground beef..toss in some left over corn and carrots from this week and maybe even another can of corn if that is not enough. pull out some potatoes wash and boil make into mashed tators for the top.(we always let the peels on just a taste we prefer) oh and because i am about using every bit of food i have in the house and not wasting i had put the beef broth in the freezer from the roast so i will pull that out and make my gravy from that.

Here's what I had for lunch. I made it on the week-end:
Slow-Cooker Shredded Chicken
Pour into slow cooker:
baby cut carrots (or carrot pieces)
Skinless Chicken pieces (boneless is even better!)
1 can pasta sauce (mine was red wine & herbs)
frozen corn
Once it is all cooked, remove chicken pieces. Remove the bones and shred the chicken. Put back in the pot and serve over rice.
Tomorrow I will eat the last portion with taco shells and melted cheddar!

OK, start to finish including dishes took me 35 min!! The post previously - figured out how I wanted to cook the chops, browned them in the electric frying pan.
Gravy - Can of mushroom soup, some water from the mashed potatoes and salt and pepper to taste, added gravy to the browned chops in the electric frying pan.
As for veggies - steamed fresh garden beans (momma bears garden) and I went with mashed spuds.

if it helps chicken fried steak is a type of chop steak pounded very thing and breaded like you would chicken to fry it,,then deep fried..is a southern thing mainly but slowly progressing to other areas. if you do not feel like putting all the effort into making your own. tyson was awsome enough to make it for us and put it in a big bag like the chicken nuggets(i chose that way alot) normally served in the south with a white pepper gravy over top,,is sooooooo yummy!

last night was super sausage supper my favorite easy 1 dish meal(now i have a large family so you might need to change the amount of what you use)
last night i used a 2 lb bag of baby carrots and half of a 1 lb bag to get them used up before they went bad.( i pre boiled these to soften them up but you can also use a bog fo frozen baby carrots from the freezer section in the store)
i cut up enough potatoes(i used red because i had extra) to make it seem the same amount of carrots to tators cut in small 1 inch cubes
i took 3 packets of savory garlic and herb lipton soup mix
and a small amount of oil.
place all of the above in a bag and shake well to coat
toss it in a 9x13 pan sprays with cooking spray and bake at 350 degrees for 35 to 45 minutes till potatoes are tender.
if you do not have pre cooked sausage cook it while this is baking
i use 3 or 4 sausages and slice them up(we make this when we have left overs from sausage on the grill because we like the grilled taste of the sausage) when your potatoes are tender stir in your sausage and put back in the oven for about 15 minutes till seasoning has cooked into it and everything is hot thru.
i love this meal because there are very few dishes to wash afterwards and it helps me use up my left overs.not to mention the fact it's yummyyyyy.
tonight we are having beef stroganoff out of my left over beef roast from sundays dinner.
being on a 1 person family budget with plenty of children i tend to buy the cheapest cuts of beef at the store for my beef roasts. 8 hours in a crock pot with veggies tenderizes any meat to where it falls apart with a fork. i just slice up the left overs and make my stroganoff sauce with sour cream and liptons soup mixes and serve over either egg noodles or rice. (hope these give you some ideas)

Mashed potatoes and gravy, green salad, chicken fried steak, peach cobbler... today is first day of school so we in need of something hearty. I always am needing some ideas. I love to cook and my family is not picky but i get stuk in a rut making same things all the time. YOU?
