What to feed my 2yr old son than the same thing everyday?

I am a single mum with limited income and I don't really know what things other than sandwiches or spaggetti for lunch. Also what else can I feed him for dinners too...I'm sick of the same stuff and so is he...I feel lost!

I think if you really think about it you are feeding him a larger variety then you think. Even if you put a grand spread of options in front of him everyday he would still pick the same 4 things to eat anyway. The great thing about kids is they are so much more in tune with there bodies needs then we are. If they need fat they will eat fatty foods if they need salt they will eat more salty foods the next time they eat (wish I was still that in tune with my dietary needs) You are doing a wonderful job and understand that whatever you place in front of your child is made with love and if you are this worried about meeting his nutritional needs most likely you are.

That photo of your little one is so beautiful! Such a cutie, you are obviously doing a good job. My two year old doesn't eat food yet, (she has a gastrostomy tube) so I am not really sure what 2 yr olds like to eat. Maybe instead of sandwiches get pita pockets and fill those will egg salad or tuna, or get soft tortillas and you can make wraps and fill 'em with chicken or cheese or beans or pretty much anything. Campbell's soup has a website that has easy recipes for stuff that is pretty cheap to make like chicken and rice casserole here it is www.campbellskitchen.com



Here is an easy recipe I saw on the campbell's website, it's called "Tasty 2-step chicken"



Ingredients:

1 tablespoon vegetable oil

4 skinless, boneless chicken breast halves

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free, 25% Less Sodium or Healthy Request®)

1/2 cup water



Directions:







Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes until it's well browned on both sides. Remove the chicken from the skillet.



Stir the soup and water in the skillet and heat to a boil. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through.



Serving Suggestion: Serve with steamed whole green beans with sliced almonds and white rice. For dessert serve fresh red grapes.



Cost per recipe: $6.32

This is a great one that everyone in my house LOVES! We add sour cream to it too. It feeds 4 of us and still left overs for lunch for me and the little one. I use two boxes of kraft dinner instead of the one it calls for and double the water and salsa. I haven't frozen it but I'm sure you could freeze half of it for you and your little one until the following week so you don't get bored of it.

I know the rut you're in! For lunches I sometimes do a mini platter and try to cover all the food groups...so some veggies cut up with a little ranch to dip, mini rice cakes or pita bread, cheese (even cheese slices are fun because you can use your cookie cutter and make fun shapes) and then some rolled up cold cuts...and he loves that it's all finger food.



For dinners, stir fry's are quick and easy and pretty cheap if you buy your veggies in season...put it on some minute rice. You can buy frozen spinach and use cottage cheese to make a big inexpensive lasagna that you can freeze half of. If you don't have a crock pot invest in one...there are tons of recipes on the internet and what's better than coming home and the stuff you threw in a pot that morning has magically become dinner. Mexican nights are really fun too!

Chicken noodle soup! My little girl loves it (sometimes its all she will eat) and it's balanced. I either make it homemade in a big batch and freeze some or buy Campbells Chunky reduced sodium soup. Shepards pie is inexpensive to make, tastes yummy and you can change it up depending on what you put in it. Chicken pot pie... same thing. Cheap and healthy. Homemade pizza... sounds crazy, but you can use pita rounds as the crust or purchase pre-made pizza rounds or even the dough (sometimes your local pizza shop will sell you some for less than $2.00). Then have fun topping it with whatever you like. Just some ideas off the top of my head..... I'll try to think of some more.
