one of my honey's favorites is shepard's pie..... here's how I do it:
1 1lb london broil seared and cooled and cut in to 1/2" cubes
2 large carrots cut in to 1/4" cubes
1 cup frozen peas
1 cup frozen sweet white corn
3-4 cloves garlic finely chopped
1/4 small yellow onion finely chopped
1 can cream of mushroom soup
5-6 potatoes (make mashed potatoes)
1 ready made pie crust (pilsbury is the best)
put onions and garlic and carrots in to frying pan and drizzle some olive or vegetable oil over them..... cook on medium heat until onions are translucent
in large mixing bowl combine the meat, peas and corn, and carrots and onions and garlic. add the soup and mix up. put in to a clear pie pan and level it out. top with the mashed potatoes, then top the potatoes with the pie crust.
cook at 400 for around 25-35 minutes or until the crust is browned and the the bottom is bubbly
*add salt and pepper to taste, add a crushed bay leaf or basil or both to taste if you like, and an egg wash (1 part yolk 1 part water) brushed on the pie crust makes for an amazingly golden flakey crust. I serve a icy cold Sierra Nevada Pale Ale with this and my honey LOVES it
