I absolutely love fish, and I cook it a few times a month. My problem is that I am not a very creative cook, and I don't know very much about cooking fish. Does anyone have any good fish recipes? I usually just use a rub and bake it or fry it. I've tried breaded fish but it never seems to turn out well. Would love some input!

My family loves this super easy fish recipe. A 1inch fillet of what ever fish you like. Slice 2 tomatoes and put on top slice half an onion and lay on top of the fish top with light italian salad dressing cover and bake for 15 minutes at 375

My kids love salmon. If its realy fresh, I would not mess with the fresh ocean taste of the fish. I try not to cover it in heavy seasonings or sauces. All I do is lightly sprinkle seasoned salt on each fillet, and drizzle some extra virgin olive oil. Bake or broil for about 15 min. You dont want to overcook it because it will be very dry. I also do the same with salmon on the BBQ gill in the summer. You can also squeeze some fresh lemon over it when you're ready to eat.
For delicate white fish like talapia, sole, pickerl, etc., lightly season each fillet with seasoned salt. Dredge in flour and shake off excess, then dredge in a beaten egg, and then into breadcrumbs. Heat a pan with a little bit of oil. Fry each side until a very light brown. Put on a sheet pan with a rack, and finish baking in the oven. This will ensure a crispy outside, and cooked inside.

My kids love fish in cornflake crumbs - either make your own by crushing up cornflakes finely or buy them.
Then put your fish filllets into flour, then egg, then the crumbs. This should help them stick. Then fry them up!
Thai Fish Cakes - I have made these a few times and the family loves them!
600g potatoes - peeled, boiled and mashed (no butter or milk)
1 x 400g tin pink salmon (or tuna)
1 small red chilli, chopped finely
1 brown onion, grated
2 tbsp crushed ginger
4 tbsp chopped coriander (cilantro)
1 egg
Mix all of the above together in a mixing bowl and then roll into balls (I usually get about 12). Roll them in breadcrumbs and fry in batches. Serve with a salad and sweet chilli dipping sauce!

I love fish also especially salmon. Mix 40ml light soy sauce and 2tbsp of runny honey together then pour over the salmon pieces, marinate in the fridge for 3-4hours and then steam cook it. You can serve it with anything you like but i like to serve it with rice which i mix with mushrooms, onions and peppers.
