Anyone have any yummy easy recipes. I am a single working mom who LOVES LOVES LOVES to cook. I'm open to a more difficult recipe too, but for time's sake the quicker one's are usually more helpful. Thanks!

Quick & easy: chicken & tortellini in alfredo sauce
boneless chicken, cut into bite size pieces grill in a little olive oil w/ whatever seasoning you like, I love sazon. Boil water, cook tortellini. When chicken is no longer pink, throw any vegetable in , cooked tortellini & jar sauce..mix together...My kids loved this.

I love to cook in my crock pot. One of my favorites is to make Pork Burritos in it. It's quick and easy and a great way to get something other than beef or chicken in my families diet. All you do is take a pork roast (whatever kind you like) and cover it with water and cook all day on low or 4 hours (or so depending on the size of the roast). Take the roast out and shred the meat and dump out the water. Then put the meat back in the crock pot and pour a bunch of salsa on top (again the amount depends on how big the roast is, but enough to coat the meat). Cook on low for 1 more hour. Then put the meat in tortillas with some cheese and eat them. You could also put lettuce on the burritos if you wanted. This would also be great stuffed in pita pockets for a different idea. I think the taste of these improves the next day after its been in the refrigerator overnight. This is great to make on the weekend and then just heat the meat up in the microwave on a weeknight.
