Ingredients

  • 1 lb ground beef
  • 1 can red enchilada sauce (small)
  • 1 jar Mexican cheese salsa con queso
  • 1 jar salsa

Preparation

  1. Cheddar cheese shredded
  2. Flour tortillas
  3. Note: Your choice depending on how hot you want this to be you may use mild, medium or hot salsa and/or salsa con queso
  4. Preheat oven to 350 degrees.
  5. Spray a 9 x 13 oven ready dish.
  6. Ground Beef Mixture:
  7. Brown ground beef and drain any excess fat.
  8. Add red enchilada sauce to ground beef.
  9. Add salsa con queso to ground beef mixture and stir.
  10. Putting it together:
  11. Cut tortillas about 2 inches from one side so that 2 will fit into dish to make each layer.
  12. Start with one layer of tortillas. On top spoon some of the beef mixture and spread over the tortillas. Sprinkle with cheddar cheese. Spoon some salsa over the cheese.
  13. Repeat layers until dish is filled. End with a layer of cheddar cheese.
  14. Baking:
  15. Place in oven and bake for 20 to 25 minutes until bubbly and the cheese on top is brown.
