This recipe is an all-in-one mix for frosting and cake. I adapted the recipe for cupcakes and made the icing decorator icing. It is so easy and since it is all-in-one very quick also! The original recipe is by Domino Sugar.
6 oz. - cream cheese, softened
1 cup - butter or margarine, softened (2 sticks)
2 teaspoons - vanilla extract
1 - (2 lb.) pkg. Domino® Confectioners Sugar
2/3 cup - milk
4 - large eggs
2 1/2 cups - all-purpose flour
1 teaspoon - baking powder
1/2 teaspoon - salt
2/3 cup - water
In a large mixing bowl, beat cream cheese, butter and vanilla extract at medium speed until smooth.
Add confectioners' sugar alternately with milk, beating 1-2 minutes or until blended. Remove 2 1/2 cups of frosting from bowl, placing into a plastic sealable bag, and set aside.
With mixer at slow speed, add eggs to remaining frosting in mixing bowl. Beat until blended.
In a separate bowl, combine flour, baking powder and salt.
Add flour mixture to frosting mixture alternately with water and continue beating 1-2 minutes or until well blended.
Line your cupcake pan with liners and fill each one with 1/3 cup of mix
Bake for 18 to 20 minutes or until they are slightly golden brown on top.
**Note** This is my adaption to the recipe, you may have to work with it to get it the way you want it.
Place your reserved mixture into a medium sized bowl
Add an extra 3 cups of powder sugar and 1/3 cup vegetable shortening.
Mix until smooth and icing will stand at a peak.
