Preparation

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Grease and flour a muffin pan, or use paper liners.
  3. Mix together applesauce, oil, egg and apple cider in a bowl.
  4. In another large bowl, combine 2 cups flour, 1/4 c brown sugar & 1/4 c white sugar, baking soda, cinnamon, ginger, cloves and salt.
  5. Fold in egg mixture until just moistened (don't over mix).
  6. Fold in cranberries.
  7. Spoon batter into muffin tins, about 2/3 full.
  8. To make Streusel topping: In a small bowl combine remaining 1/4 c. flour, 1/4 c. brown sugar, 1 tsp ground cinnamon. Cut butter into small pieces and combine into flour mixture until small lumps form. Sprinkle Streusel mixture on top of each muffin.
  9. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
