• Every now & then, hubby and I get out for a date night and call in a babysitter. More often, though, he's traveling and I've got some meeting to go to, so, babysitter still gets called in. On those nights, I like to have something more than pizza and I like to make sure the kids get their greens, too. This one-pot meal is perfect for the kids and the babysitter or the whole family.

Ingredients

  • Chicken - legs, thighs (boneless or not, your preference) - 8 pieces
  • Salt, pepper, oregano, garlic powder
  • Olive oil
  • Saffron or Sazon Seasoning by Goya (1 packet)
  • Spinach (fresh or frozen) - 2 cups
  • Rice (the kind that sticks together, not the instant rice) - 3 cups

Preparation

  1. Season chicken pieces with salt, pepper, oregano, garlic powder to your taste.
  2. Heat olive oil in large pan. Brown chicken lightly on each side.
  3. Set chicken aside. Drain oil from pan.
  4. Return chicken to pan and add spinach.
  5. Pour about 3 cups of rice in the pan. Add saffron seasoning and mix together.
  6. Pour water on top of all ingredients - about a finger's width above the level of the rice.
  7. Place lid on top of pan and let cook on low/medium until rice is done, about 30-40 minutes. If you notice all the water has cooked off and rice looks dry, add another cup and then return lid to pan.
  8. Use this recipe as a base and change it up with these alternatives: Use fish, shrimp, or tofu instead of chicken * Use curry seasoning instead of the saffron mix * Use asparagus or other favorite greens instead of spinach * Add a little bit of cheese - crumbled goat cheese, cheddar, your family's preference.
