This is not my original recipe but I cook it alot! I got this recipe from Jane Hansen and it is one of their family recipes and now one of my regulars. Not the lowest in fat but I have never had a complaint.
6 Thin sliced chicken breasts
8 oz. whipped cream cheese w/ chives (or buy regular whipped and fresh chives, dice chives very small and mix together)
Cook bacon partially so still soft but burns off some fat.
Flatten chicken breasts with mallot and wax paper(saran wrap works too) to 1/2 inch thickness.
Lay them out. Spread cheese mixture on each breast dividing accordingly so each has same amount.
Divide the butter in 6 and dot each one.
Roll each filet (secure w/toothpick if necessary) and wrap two pieces of bacon around each. Try to lay the rolls on their side so all bacon will be exposed to and not on bottom so they will cook evenly as you put them into a baking pan.
Cook at 400 degrees for about 40 mins or till chicken runs clear.
