No Bake Chocolate Oatmeal Cookies

Ingredients
- 1/2 cup milk
- 1/2 cup butter
- 4 tablespoons unsweetened cocoa powder
- 1/2 cup peanut butter
- 3 cups quick-cooking oats
- 1 teaspoon vanilla extract

Preparation
- In a medium saucepan, combine sugar, milk, butter, and cocoa.
- Bring to a boil, and cook for 1 1/2 minutes.
- Remove from heat, and stir in peanut butter, oats, and vanilla.
- Drop by teaspoonfuls onto wax paper.
- Let cool until hardened.

This is a great, great recipe and so easy! The thing I did differently was I try to skip the butter and double the peanut butter (I use creamy style some of my girls were finicky on nuts) and also use 1/2 cup raisins added and/or coconut .. it's a little more healthy. Sometimes I add a little extra fiber. A couple last hints my girls like it better with 3 tablespoons unsweetened cocoa powder and the texture ...it's all about the boiling time. If you under-boil you will get cookies that won't set, if you over-boil, you will get cookies that will crumble and not form at all. It's a really good and healthy recipe .. even if your kids don't like to eat most healthy food! Sugar should be 1 1/2 cups some people do 2 cups. (My crew has always loved it with 1 1/2 cups) I try to scrimp on sugar yet still have everyone love it.

These look sooooo good...we used to call these "macaroons" growing up and my Mom used to make them a bit differently but these look VERY similar. YUMMY...I can't wait to try these. Thanks for sharing!!! Lori. :o)

It didn't turn out at all....it wouldn't set, it stayed kinda loose. It ended up being yummy goo. So next time defiantly going to look for another recipe.
