Ingredients

  • 12 eggs (or an equivalent using egg substitute)
  • 1/2 cup milk
  • 1 tsp. vanilla
  • 4 TBS. maple syrup, divided
  • 1/8 tsp. salt
  • 4 TBS. margarine OR butter, melted
  • 1 1/2 tsp. cinnamon
  • 8 slices bread
  • Ground pepper
  • 5 tortillas, warmed
  • 5 oz. lite, shredded cheddar cheese

Preparation

  1. INITIAL PREPARATION: In shallow bowl, combine and whisk 12 eggs (or an equivalent using egg substitute), 1/2 cup milk, 1 tsp. vanilla, 1 TBS. maple syrup, 1/8 tsp. salt. Set aside.
  2. BAKED CINNMAON FRENCH TOAST:
  3. Preheat oven to 400 degrees.
  4. In small bowl, mix melted margarine OR butter, 3 TBS. maple syrup, and cinnamon.
  5. Divide mixture evenly, and spread onto bottom of 2 greased 13x9" baking pans it will be a thin layer).
  6. Dip both sides of bread slices in egg mixture.
  7. Place 4 dipped pieces in one pan and 4 in the other. Reserve remaining egg mixture for recipe below.
  8. Bake for 20-25 minutes or until golden brown.
  9. Invert onto serving platter.
  10. Serve with toppings as desired.
  11. Serves 8.
  12. BREAKFAST BURRITOS:
  13. Take remaining egg mixture from above and add 1/8 tsp. pepper and whisk.
  14. Pour into medium, greased, non-stick frying pan.
  15. Cook until eggs are scrambled.
  16. Take 1/5 of eggs, and divide evenly among 5 warmed tortillas.
  17. Add 1 oz. of cheese to each tortilla, and roll up.
  18. Serves 5.
