• This is a really simple dish which is a healthy alternative to a typical breakfast of say toast or cereal. And, it is also perfect as a snack-on-the-go.

  • Avocados
  • Eggs
  • Half a tomato finely diced
  • Quarter of a small onion finely diced
  • Oregano chopped in small pieces
  • Half a teaspoon of sea-salt
  • 1 tablespoon of olive oil

Preparation

  1. Pre-Heat oven to 350 F
  2. Cut avocado in half and pit
  3. Scoop out approximately half of the avocado flesh of each half of avocado
  4. Crack one egg into each half of avocado
  5. Garnish with dressing - In small bowl, combine well the tomato, onion, olive-oil and sea-salt
  6. Place avocado on baking trayLet cook in oven until preferred hardness of eggs is desired, I like mine well-done which took approximately 35 minutes
  7. Take out of oven and serve
