Ingredients

  • 5 medium red potatoes, peeled and sliced
  • 1/4 cup olive oil
  • 1 cup chopped onion
  • 1/4 cup chopped green pepper
  • 3 cloves garlic, minced
  • 4 cups frozen chopped broccoli
  • 12 eggs, beaten
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup water
  • 1 t. dried basil
  • 1/2 t. salt
  • 1/2 t. pepper
  • 1 1/2 cups shredded Jack cheese

Preparation

  1. Sauté potato in oil in a large skillet 10 minutes.
  2. Add onion, green pepper and garlic; saute until tender.
  3. Add broccoli; cover and cook 5 minutes.
  4. Arrange mixture in an 11 x 7 inch baking dish.
  5. Combine eggs and next 5 ingredients. Beat until blended. Pour over potato mixture. Sprinkle with jack cheese.
  6. Bake, uncovered at 350 *F for 25 to 30 minutes or until set.
