Ingredients

  • 1 c, Quick oats
  • 1/2 c. Brown Sugar, packed
  • 1 1/2c. Flour
  • 3 Ripe Bananas
  • 2 t. Baking Powder
  • 1 Egg
  • 1/2 t. Baking Soda
  • 1 t. Vanilla Extract
  • Dash Salt
  • 3/4 c. Chocolate Chips
  • 2 T. Butter, softened

Preparation

  1. Combine dry ingredients in a large bowl.
  2. In a medium bowl, beat butter and brown sugar until crumbly.
  3. Beat in bananas, egg and vanilla.
  4. Stir into dry ingredients until just moist.
  5. Fold in chips.
  6. Place muffin liners into muffin pan. Fill 3/4 full.
  7. Bake at 350 for 15-20 mins. Cool 10 mins. before removing from muffin pan. Finish cooling on wire rack. NOTE: I sometimes replace the chocolate with peanut butter chips. My kids love them.
