• I found this recipe in an old cook book of mine called A World of Baking. I love it because it is unusual and because it used up mushy banana but does not call for 5 of them like my favorite banana bread recipe.

Ingredients

  • 1/2 Cup Butter softened
  • 3/4 Cup Sugar
  • 1 3/4 Cup Flour
  • 1 Teaspoon Vanilla
  • 2 Large Eggs
  • 1 1/2 Teaspoons Baking Powder
  • 1/2 Teaspoons Baking Soda
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoons Cinnamon
  • 2/3 Cup mashed banana
  • 1/3 Cup Buttermilk or soured milk
  • To sour milk that has not gone bad add a teaspoon or two of vinegar to it.

Preparation

  1. This can be messy but the resulting cake is worth it.
  2. Wash your hands and clean under your finger nails to get ready to prepare this recipe.
  3. To start mix the banana with the milk and let sit aside in a small bowl
  4. Set aside 1/4th of the sugar.
  5. Make the streussel:
  6. With your hands cream the butter with the rest of the sugar
  7. When fully mixed add 3/4 a cup of the flour.
  8. You want the oils from your hands so no spatulas utensils or mixers here
  9. Set aside a 1/2 cup of this new mixture or dough.
  10. To the remainder add the 1/4 cup of sugar you reserved
  11. Also add the vanilla and eggs
  12. Beat to smooth
  13. Sift together the remaining flour with the other dry ingredients.
  14. Then combine this mixture with the egg mixture and add the banana milk mixture
  15. When all items are incorporated you are ready to pour your batter into a prepared pan.
  16. A buttered dish sized 8 by 8 - 10 by 10 will work fine.
  17. With the batter poured into the pan crumble the sugar butter mixture over it
  18. It can be moist like play dough or course like granola in your hands
  19. Bake at 375 for 30-40min.
  20. The cake should test done when poked with a knife or toothpick etc.
  21. Remove from oven and allow to cool in pan slightly before turning out
  22. Serve warm or room temperature
