Heat frying pan and add bacon then cook until lightly browned the remove to a casserole dish. Add half the butter, increase the heat in frying pan and add the meat - quickly brown meat on all sides then tranfer meat to the casserole dish. Add remaining butter to frying pan with chopped onion, and garlic, cook on low heat until onion is soft. Sprinkle in the flour, stir well then add wine. Keep stirring until bubbling and thickened then stir in tomato paste, sugar, salt and pepper to taste.
Pour the sauce over the meat in the casserole dish and put the bouquet garni in the middle. Cover and cook for 30 minutes then add the small onions and mushrooms, stir gently then cover and cook for a further 1.5 hours. Remove the bouquet garni and serve with vegies or whatever you fancy,
