• This dish is yummy, fun and healthy. No one ever believes the cream is made of cashews! It is easy to serve lots of guests and also packs well in school lunch. For the fourth of July it is wonderful with red and blue berries, but peaches, plums, bananas, apples, grapes, mango etc. work as well. You can create elaborate parfaits in advance or you can set up a bar and let everyone create their own. Kids and adults always give this dish an enthusiastic thumbs up!

Ingredients

  • 3 ½ cups Cashews
  • 1 1/1 cups Coconut Water (tap water also works)
  • 2 tablespoons Honey (or 4 Dates)
  • 1-2 tablespoons of Vanilla
  • Dash of Nutmeg (or Cinnamon)

Preparation

  1. Soak Cashews for 1-3 hours.
  2. Blend in a high-speed blender until smooth. (A food processor will also work, but make sure to soak nuts more.)
  3. Wash berries or dice fruit.
  4. To create a parfait, put one layer of fruit then one layer of cashew cream.
  5. Keep alternating until the glass is full.
