Ingredients

  • 1 cup quick cooking oats
  • 1 cup orange juice
  • 2 T vanilla
  • 1 cup sugar
  • 2 tsp. salt
  • 1 cup canola oil
  • 3 cups flour (I use half oat & half wheat flour)
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3 cups frozen or fresh blueberries

Preparation

  1. Blend all ingredient (except the blueberries) together.
  2. Then fold in the blueberries.
  3. Sprinkle the top of the muffins with a cinnamon and sugar mixture (1 1/2 tsp. cinnamon & 4 T sugar).
