• I discovered this dish at a South African cuisine restaurant. I liked it so much that I figured out how to make it. It has protein, a veggie serving, a starch, and a fruit serving!

Ingredients

  • 1 pound of lean ground beef
  • 1 medium onion chopped
  • 3 small cloves of garlic minced
  • 1 cup of carrots, peeled and chopped
  • 1 large potato, peeled and chopped
  • 1/2 cup of golden raisins
  • 1 can of diced tomatoes
  • water
  • 1 Tbs of curry powder
  • condiments:
  • sliced bananas
  • coconut
  • mango pico de gallo (you can buy pico de gallo and add diced mango to it)
  • Mango chutney

Preparation

  1. In a large pot, cook the ground beef, onion, and garlic. you can use a little oil to help it along.
  2. add the rest of the ingredients. When you add the water, use the tomato can and fill just to the top of the ingredients.
  3. cook on medium until the carrots and potatoes are soft.
  4. serve with the condiments. You can buy pico de gallo in the produce section. If you do not know what pico de gallo is, It is chopped tomato, onion and jalapeno and cilantro mixed together.
