Broccoli oh Broccoli…..why is it that you are always on the sidelines? It simply isn’t fair. Many people, including myself consider you our favorite vegetable (by a landslide might I add) However you typically get sauteed with the pasta dishes, stir fried with Asian & stuck next to the potatoes showcasing the juicy steaks. Well, I am here to change all that and give you the recognition you deserve. Put an end to the chorus and let you shine in your own show. My “Burnt Broccoli Parmigiana” is a take-off on one of our favorite ways of cooking Broccoli in the summer time. We brush it with some olive oil and then char it on the grill. I thought it could be a lot of fun to add an Italian twist with some luscious tomato sauce and sprinkle of gooey cheese to give it the “WOW” factor! Did it?
