• Broccoli oh Broccoli…..why is it that you are always on the sidelines? It simply isn’t fair. Many people, including myself consider you our favorite vegetable (by a landslide might I add) However you typically get sauteed with the pasta dishes, stir fried with Asian & stuck next to the potatoes showcasing the juicy steaks. Well, I am here to change all that and give you the recognition you deserve. Put an end to the chorus and let you shine in your own show. My “Burnt Broccoli Parmigiana” is a take-off on one of our favorite ways of cooking Broccoli in the summer time. We brush it with some olive oil and then char it on the grill. I thought it could be a lot of fun to add an Italian twist with some luscious tomato sauce and sprinkle of gooey cheese to give it the “WOW” factor! Did it?

Ingredients

  • 1 small head of broccoli washed and completely dry of all water cut into spears
  • 2 tablespoon of olive oil
  • 1 cup low sugar marinara sauce
  • ½ cup part skim mozzarella cheese
  • 2 tablespoon ground Parmesan Cheese

Preparation

  1. Preheat oven to 350 degrees.
  2. Place broccoli in a large bowl and drizzle with olive oil. Toss to coat.
  3. Heat a large grill pan or grill to medium-heat. Using tongs place broccoli spears on pan and cook for about 4 minutes per side turning frequently.
  4. Once the broccoli is cooked to your liking remove it from the pan and place it in a sprayed oven-safe cooking dish
  5. Spoon on 2 tablespoons of sauce onto each spear. Then sprinkle on the mozzarella.
  6. Cover with foil and bake for 15-20 minutes until cheese starts to brown and bubbles. Removing the foil the last few minutes of cooking time to get top nice and browned.
  7. Sprinkle with Parmesan Cheese and ENJOY!
