Bake the potatoes in the microwave while you scramble the eggs. Dice the ham, spinach and cilantro and throw them in with the eggs. When the potatoes are done cut them into 1/2 inch cubes and add them to the pan too. Now top it with the cheese.
Fill the tortillas with the egg concoction and roll them up in foil, making sure the ends are nice and tight. One layer of foil is enough. Put them in a cooler to take with you camping. Warm them up on a grate over a campfire for 10 minutes. (5 minutes on each side)
