Preparation

  1. fresh basil (handful)
  2. about 2 tablespoons extra virgin olive oil
  3. use a 9X11 casserole dish
  4. empty whole canned tomatoes into casserole dish and smash into pieces
  5. chop veggies in to inch size pieces and layer over smashed tomatoes,
  6. then sausage and basil, then fresh tomatoes quartered or eighths,
  7. cover and cook at 400 for 20 minutes. Uncover reduce temp to 375 for 30 minutes. For those who don't count calories you can add Parmesan Romano to the top and return to oven for five minutes for a crispy top. Also, I use Bragg's Liquid Amino Acids instead of salt. However, salt can be added.
