  • 6 T butter
  • 3 large eggs
  • 3 T flour
  • 1/2 c sugar
  • 1tsp baking powder
  • 1tsp vanilla

Preparation

  1. Preheat oven to 350 *F.
  2. Slice carrots 1/4 in thick slices.
  3. Place in microwave safe bowl with butter, cover and cook on high 7-8 min or until soft.
  4. Put carrots in food processor with other ingredients , process 20 - 30 seconds or until well blended.
  5. Transfer to 2 qt baking dish.
  6. Bake uncovered about 40 minutes or until toothpick comes out clean.
