Ingredients

  • 2 cups uncooked macaroni
  • 3 cups cubed cooked chicken ( or canned)
  • 1/2 cup cubed Velveeta cheese
  • 1 small onion-chopped
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1 8 oz. can sliced water chestnuts-drained
  • 1 can cream mushroom soup
  • 1 can cream chicken soup
  • 1 1/3 cup milk
  • 1 can chicken broth
  • 1/4 cup butter-melted
  • 2/3 cup crushed saltines-about 20 crackers
  • 3/4 cup cashews

Preparation

  1. In a greased 9x13 pan, layer the first 7 ingredients in the order listed
  2. In a bowl, combine soup, milk, & chicken broth. Pour over water chestnuts.
  3. Cover & refrigerate overnight.
  4. Toss butter & crackers together. Sprinkle over casserole. Top with Cashews.
  5. Cook at 350 for 35-40 min.
