• This Cheese pie recipe makes for an easy treat that is both tasty and satisfying.

Ingredients

  • Cheese pie ingredients:
  • -Dough:
  • 550 grams of white flour
  • 14 tablespoons of oil
  • 2 whole eggs
  • 10 grams of fresh yeast
  • 1 teaspoon of sugar
  • 1 tablespoon milk
  • 50-60 ml. yogurt
  • 1 pinch of salt
  • -Filling:
  • 800 grams fresh cheese
  • 3 large eggs or 4 small
  • 2 tablespoons of semolina
  • 150 grams of raisins
  • sugar to taste (as sweet as you like the stuffing)
  • 1 tablespoon vanilla sugar
  • optional: lemon zest and cinnamon
  • -To give that lovely, golden color to the finished pie
  • 1 egg yolk
  • 2-3 teaspoons yoghurt
  • powdered sugar

Preparation

  1. Prepare the dough and leave aside.
  2. Mix cheese, eggs, semolina, raisins, sugar until they becomes an homogeneous paste.
  3. Break the dough in 4 parts and roll each separately with a wooden rolling pin until you get a very thin layer.
  4. Place 1/4 of the mixture on top of the first layer. Roll or wrinkle the pie sheet until you're happy with how it looks and place in a cooking tray of 36 × 38 cm (I use a round one to give the finished pie a special look). Continue the same way with the remaining 3 pie sheets.
  5. Mix 1 egg yolk and 2-3 teaspoons yogurt and pour the mixture evenly on the uncooked pie.
  6. Bake for aprox. 30 min on a medium oven flame.
  7. Enjoy while still hot, at least that's how I prefer it.
