Ingredients

  • 1 1/2 - 2 lbs. chicken (strips or cut up )
  • 12+ tortillas
  • 1 1/2 cups mushrooms (optional)
  • green onion (the whole grouping)
  • 1 1/2 cups sour cream
  • 1sm can of green chiles or jalopenos ( if u want it spicier)
  • 1lb of velvetta or other processed cheese block
  • 1/2 pound of grated cheddar cheese

Preparation

  1. preheat oven to 350 *
  2. cook chicken and mushrooms in skillet on med to med high til chicken is cooked all the way thro
  3. while this is cooking spray the inside of a 9x 13 casarole pan
  4. chop grn onions and mix them in a med bowl with grn chilies and sour cream
  5. slice the velvetta into 1/2 in x1/2 in x 3 in strips
  6. to assemble: place spoon desired amount of chicken and mushrooms in center of tortila like u would on a taco then place a spoonful of sourcream mixture on top of chicken kinda spread it out then place 2 strips of cheese on top of that then roll and place in pan and repeat with next totilla
  7. continue til pan is full then sprinkle grated cheese and any left over strips of cheese on top and place in oven
  8. cook until edges of tortillas are slightly brown and cheese is bubbly
