Ingredients

  • 2-3 bone-in Chicken breasts
  • 1/2 c. chopped bell peppers
  • 1 can cream/mushroom soup
  • 1 can cream/chicken soup
  • 1 lb. Velveeta cheese, cubed
  • 6 T. margarine
  • 1/2 c. chopped onion
  • 1/4 tsp. garlic powder
  • 1 (7 oz.) pkg. spaghetti
  • 1 can chicken broth

Preparation

  1. Boil chicken breasts in water until tender, about 45 minutes. When cooled, cut chicken into bite-sized pieces.
  2. RESERVE BROTH FOR LATER.
  3. Set aside, in large pan, melt margarine.
  4. Add bell pepper and onion.
  5. Saute until tender but still crunchy.
  6. Add cream/mushroom soup, cream/chicken soup, canned chicken broth & garlic powder.
  7. Bring to simmer & cook for 5 minutes.
  8. With the reserved broth from the chicken (may need to add water if there is not enough liquid), cook the spaghetti according to package directions.
  9. To the soup mixture, add the Velveeta & allow to melt over low heat.
  10. When melted, stir in cooked spaghetti & chicken.
  11. Warm through on low heat.
  12. Allow to stand for 20-25 minutes.
