• Delicious scalloped potato recipe like grandma used to make! Literally, as this came from my grandma's own recipes, though I modified it slightly! Sometimes you want something hot, creamy, and filling to warm you up on cold evenings. A hearty potato side dish is just thing! And the carrots add color, nutrients, and irresistible flavor!

Ingredients

  • 2 cups water
  • 2 tsp salt
  • 5 cups potatoes
  • 1 1/2 cups chopped onion
  • 2 cups carrots, sliced diagonally
  • Cheese sauce:
  • 3 tbs butter
  • 1 tbs crushed garlic
  • 2 tbs flour
  • 1 tsp salt
  • pepper to taste
  • 1 1/2 cup milk1 1/2 cups grated cheddar cheese

Preparation

  1. Preheat oven to 375
  2. cook all vegetables in 2 cups of boiling water for 5 minutes
  3. Drain
  4. Saute butter and garlic in a sauce pan, add remaining cheese sauce ingredients, stirring frequently until well combined and all cheese is melted.
  5. In casserole dish, alternate layers of vegetables and cheese sauce, use remaining cup of cheese on top.
  6. Cover and bake 1 hour in 375 degree oven
  7. Remove cover for last 10 minutes to brown top if desired
