Over medium heat add butter and olive to skillet. When it is sizzling add chicken breasts and cook 2-4 minutes on each side, depending on thickeness, or until almost cooked through.
Add water to the skillet and bring to a boil. When boiling add rotini noodles and reduce heat and simmer for 5 minutes. Add broccoli packet and recover and simmer for 4 more minutes.
Cut into chicken to make sure chicken is cooked through and check pasta for tenderness. Add velveeta cheese packet and stir and let heat through for 5 minutes.
