In Pan spread a bit on bottom to cover (this will save you time cleaning)
Place tortilla shell in hand like soft toco and fil with mixture. Roll shut over pan and place on the bottom repeat until the bottom of the pan is full of stuffed enchelladas. Pour remaining mixture over top of the enchellads and then spreinkle with remaining cheese. Cover with aluminum foil and bake for 45mins -1 hour
Remove foil for last 15 minutes
Let cool while setting table serve with your favorite tortilla chips and salsa as well as a nice salad and enjoy!
