Ingredients

  • 2 lbs boneless skinless chicken
  • 1 tbl olive oil
  • 1 onion diced
  • 1 bunch cilantro
  • 1 can diced green chilies
  • 1 tsp cumin
  • 1 tsp garlic salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1 can black beans
  • 3 cans green enchilada sauce
  • 2 cups cheese (pepper jack or your favorite)
  • 1 package corn tortilla's

Preparation

  1. Preheat oven to 350. Grease a large casserole dish. Pour olive oil into a skillet, add chicken cook on med heat. While chicken is cooking add onion, cilantro, green chilies, seasoning. When chicken is no longer pink , break up with your spatula or cooking utensil. Add black beans with the juice, 1/4 can of enchilada sauce. Pour a little bit of enchilada sauce into bottom of casserole pan. Lay down a layer of corn tortillas add, chicken mixture, cheese, corn tortillas on top and chicken mixture cheese and tortillas pour enchilada sauce all over making sure it gets down all the sides add remaining cheese and bake for a half hour uncovered.
  2. We put sour cream , avocado and hot sauce on ours when done. I never make my enchiladas the same, sometimes i will add frozen corn , rice (already cooked), pinto beans etc.....
