Ingredients

  • 4 skinless, boneless chicken breasts
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 3/4 cup parmesan cheese
  • 1/4 cup olive oil
  • 1 jar favorite spaghetti sauce
  • Mozzarella cheese

Preparation

  1. Preheat oven to 350 *F.
  2. Rinse chicken. Pat dry.
  3. Beat eggs in a medium sized bowl. Set aside.
  4. Mix together breadcrumbs and 1/2 cup of Parmesan cheese in medium bowl.
  5. Heat olive oil in skillet on med./high heat.
  6. Place chicken in egg and then put in breadcrumb mixture.
  7. Place chicken in skillet for about 3-4 minutes on each side.
  8. Pour spaghetti sauce in 9x13 baking dish.
  9. Once chicken is browned on both sides, put into baking dish on top of sauce.
  10. Cover with foil. Cook for 30 minutes.
  11. While chicken is baking, cook pasta.
  12. After 30 minutes pull off foil, sprinkle with remaining Parmesan and top with as much Mozarella as you desire, I use about 1 cup.
  13. Cook for about 5-10 minutes to melt cheese.
