• Hi! I'm new to the Circle of Moms and Recipe Swap. This recipe has become one of our favorites...it's nutritious and not too heavy. Plus, my 3 1/2 year old loves it and tells me, "Mommy, you make the bestest soup!"

Ingredients

  • 3 cups chicken, chopped into small pieces
  • 4 tbsp sunflower or safflower oil
  • 2 small onions (or one large), diced
  • 3 cups carrots, thinly sliced
  • 8 oz. cauliflower florets (I thaw frozen cauliflower)
  • 8 oz. green beans (I thaw frozen green beans)
  • 7 1/2 - 8 cups chicken stock
  • 4 tsp dried mixed herbs (I use salt-free Mrs. Dash)
  • 9 oz. small pasta shapes (I use half alphabet pasta)

Preparation

  1. salt and pepper (as desired)
  2. Heat the oil and quickly saute the chicken, onions, and carrots.
  3. Stir in the chicken stock, remaining veggies and herbs and bring to a boil.
  4. Add pasta and return to a boil, cover and simmer for 10 minutes.
  5. Season to taste and serve with crusty bread. Serves 8.
  6. Note: I often boil the chicken ahead of time so that it is already cooked.
