• One of our family favorites is a quick and easy chicken with a kick for mom and dad, and a kick for kids.
  • This is a great dish to serve over rice or with salad and bread. Kids love the sweet pineapple and the thinly sliced chicken (makes a good finger food in a pinch). The garlic and ginger are great for an exotic kick but they also help fend off colds - key when there are kids in the house.

Ingredients

  • 1 lb chicken breast cut in strips
  • 1/2c chopped pineapple
  • 1 tbsp chopped ginger
  • 2 cloves garlic
  • 2 tbsp olive oil
  • pinch sea salt

Preparation

  1. In a stir fry pan, warm the olive oil, ginger, and garlic.
  2. Then add the chicken and start to brown.
  3. After about 5min, add the pineapple and reduce heat until the chicken is all the way cooked through.
  4. Sprinkle the sea salt on top and serve!
