Ingredients

  • 1/2 lb ground beef
  • 1/2 lb beef (or pork) chorizo
  • 1 cup chopped onion
  • 3 cloves garlic crushed & minced
  • 2 cans (4 oz each) whole mild chiles- drained and seeds removed
  • 2 cups cheddar cheese, or mexican cheese, divided
  • 4 eggs
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 1/2 tsp salt

Preparation

  1. few dashes of tobasco or cayenne pepper
  2. In a large skillet, brown meats. Add onion and garlic cook until onion is tender, drain well.
  3. Line a 9x9 inch square pan w/ 1/2 the chiles, top with 1 1/2 cups cheese.
  4. Add meat, then top with remaining chiles. Set aside
  5. Beat eggs & flour until smooth, add milk, salt and tobasco. Pour mixture over casserole. Bake uncovered in a 350' oven for 35-45 min, then sprinkle with remaining cheese. Let sit for 5 minutes before serving.
  6. This is my families favorite casserole. I use 2 - 7oz cans of chiles and omit the flour as it tastes much better. I also use reduced fat cheese and serve with spanish rice. Enjoy!!
