• This recipe comes straight from Marcy Jo's Mealhouse in Tennessee! It's my favorite cake because it has NO eggs! It's ingredients are pantry staples, so you can make it anytime.

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 2 t baking soda
  • 2 t salt
  • 6 T cocoa
  • 3/4 cups veg. oil
  • 4 T apple cider vinegar
  • 2 t vanilla
  • 2 cups cold water
  • Icing:
  • 1 cup butter flavored Crisco shortening
  • 1 t vanilla
  • 4-5 T unsweetened cocoa
  • 1-2 T milk
  • 4 cups powdered sugar
  • pinch of salt

Preparation

  1. Preheat oven to 350.
  2. Flour and grease 9x13 pan or two round cake pans.
  3. Mix all dry ingredients with a whisk.
  4. Add liquids and stir, mixing well till all combined.
  5. Pour in prepared pans.
  6. Bake for 30 min. or till toothpick comes out clean.
  7. Icing:
  8. Blend the shortening, vanilla, and salt in a large bowl using electric mixer.
  9. Add in cocoa and milk and blend.
  10. Gradually add in powdered sugar one cup at a time.
  11. Spread on top of cake after cake has cooled a bit.
