Ingredients

  • 15Og gluten free and wheat free plain flour (I use Dove’s Farm)
  • 1tsp xanthan gum
  • 30g desiccated coconut
  • 75g dairy free margarine (I use Pure soya or Sunflower)
  • 50g caster sugar
  • 100g dairy free, gluten free and egg free chocolate chips(I use a brand called “D&D chocolates”)
  • 20g coconut oil
  • 2tsp golden syrup or honey
  • 1tsp vanilla extract

Preparation

  1. Place the flour, xanthan gum and desiccated coconut into a bowl and rub in the margarine with your fingers. Add the sugar and mix bring it all together with your hands. It will come together into a ball of dough.( no need to add any liquid)
  2. Put the dough into the fridge for 30 minutes. Pre-heat the oven to 170 degrees celcius (Fan).
  3. When the dough has chilled take it out and roll between 2 sheets of clingflim, roll it out to about 1 cm thick and cut the bars to whatever size you like I get about 12 bars from this mix. Place them on a baking tray lined with baking paper and bake in the oven for 20 minutes.When baked take them out and lay them on a wire rack too cool.
  4. Mean while make the chocolate coating put the chocolate, coconut oil, golden syrup and vanilla extract into a bowl over a pan of hot water. Stirr them all together then, when the biscuits are cooled coat them in the chocolate mix. Lay them on a tray let them cool then, place them in the fridge to harden. ( Don’t put the chocolate into the fridge hot this will take the shine off the chocolate).
  5. These can be stored in a airthighht container for at least a week. Enjoy
