  • 1 small onion, diced
  • 1/2 red bell pepper, diced
  • 3 c veggie broth
  • 1 can of unsweetened coconut milk
  • 2 cups of corn (fresh or frozen)
  • Salt and pepper to season

Preparation

  1. In a medium skillet use a dash of oil to saute the onion and bell pepper.
  2. When the onion and bell pepper are soft add remaining ingredients.
  3. Bring soup to a boil, then simmer for 15 minutes.
