Colorful Quinoa Salad
- This is a great salad packed with quinoa for protein and a variety of raw veggies for nutrients! This makes a great meal in itself or can be used as a side dish. Just double or triple for more.
Ingredients
- 1/2 cup cooked quinoa
- 1 celery stalk, sliced
- 1 tomato, diced
- 1 carrot, diced
- 2 green onions, sliced
- 1 jalapeno, sliced
- 1 avocado, diced
- 1 lime, juiced
- 2 tablespoons extra virgin olive oil
- sea salt (to taste)
- cracked black pepper (to taste)
- dulse flakes (to taste)
- cumin (to taste)
